Ingredients
- 1 head romaine lettuce, chopped
- 2 tomatoes, chopped
- 1 cucumber, chopped
- 2 green onions, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup cooked chickpeas
- 1/2 cup pita chips, crumbled
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon zaatar
- Salt and pepper to taste
Directions
- In a large bowl, combine the lettuce, tomatoes, cucumber, green onions, parsley and mint. Toss to combine.
- In a small bowl, whisk together the lemon juice, olive oil, garlic, zaatar, salt and pepper. Pour over the salad and toss to combine.
- Add the feta cheese, chickpeas and pita chips and toss to combine.
- Serve immediately.
