Ingredients

  • 1 head romaine lettuce, chopped
  • 2 tomatoes, chopped
  • 1 cucumber, chopped
  • 2 green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cooked chickpeas
  • 1/2 cup pita chips, crumbled
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon zaatar
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the lettuce, tomatoes, cucumber, green onions, parsley and mint. Toss to combine.
  2. In a small bowl, whisk together the lemon juice, olive oil, garlic, zaatar, salt and pepper. Pour over the salad and toss to combine.
  3. Add the feta cheese, chickpeas and pita chips and toss to combine.
  4. Serve immediately.
