Ingredients
- 1 tablespoon olive oil
- 1/2 cup onion, finely chopped
- 1 cup cremini mushrooms, sliced
- 1/2 teaspoon garlic, minced
- 1/2 cup orzotto (or risotto) rice
- 1 cup vegetable stock
- 1/2 cup dry white wine
- 1/2 cup frozen peas
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and pepper to taste
Directions
- Set the Instant Pot to sauté mode and add the olive oil.
- Once the oil is hot, add the onion, mushrooms, and garlic and sauté for 3-4 minutes, until the vegetables are softened.
- Add the orzotto (or risotto) rice and stir to coat with the oil. Toast the rice for 1-2 minutes.
- Add the vegetable stock, white wine, and peas. Stir to combine, then secure the lid on the Instant Pot.
- Cook on high pressure for 6 minutes. Once the cooking time is complete, quick release the pressure.
- Stir in the heavy cream, Parmesan cheese, and butter. Season with salt and pepper, to taste.
- Serve in individual bowls and enjoy!
