Instant Pot Creamy Mushroom Orzotto

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup onion, finely chopped
  • 1 cup cremini mushrooms, sliced
  • 1/2 teaspoon garlic, minced
  • 1/2 cup orzotto (or risotto) rice
  • 1 cup vegetable stock
  • 1/2 cup dry white wine
  • 1/2 cup frozen peas
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Directions

  1. Set the Instant Pot to sauté mode and add the olive oil.
  2. Once the oil is hot, add the onion, mushrooms, and garlic and sauté for 3-4 minutes, until the vegetables are softened.
  3. Add the orzotto (or risotto) rice and stir to coat with the oil. Toast the rice for 1-2 minutes.
  4. Add the vegetable stock, white wine, and peas. Stir to combine, then secure the lid on the Instant Pot.
  5. Cook on high pressure for 6 minutes. Once the cooking time is complete, quick release the pressure.
  6. Stir in the heavy cream, Parmesan cheese, and butter. Season with salt and pepper, to taste.
  7. Serve in individual bowls and enjoy!
