Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 celery stalk, diced
  • 1 carrot, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
  • 4 cups chicken broth
  • 1 cup wild rice
  • 2 boneless, skinless chicken breasts, diced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Directions

  1. Set the Instant Pot to the sauté setting and add the olive oil. Once the oil is hot, add the onion, celery, carrot, garlic, thyme, oregano, and black pepper and sauté for 4–5 minutes until the vegetables are softened.
  2. Add the chicken broth, wild rice, and chicken to the Instant Pot. Close the lid and set the pressure valve to “sealing”. Select the “manual” setting and set the timer to 8 minutes.
  3. Once the timer is up, carefully open the pressure valve and let the steam out. Open the lid and stir in the cream and Parmesan cheese. Serve the chowder hot.
