Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups basmati rice, soaked for 30 minutes
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup mint leaves, chopped
  • 1/2 cup cooking oil
  • 1/4 cup ghee
  • Whole spices (cinnamon, cardamom, cloves)
  • 2 tbsp biryani masala
  • 1 tbsp red chili powder
  • 1 tbsp turmeric powder
  • Salt to taste
  • 1/2 cup fried onions (for garnish)
  • Saffron strands soaked in milk
  • Fried cashews and raisins (for garnish)

Directions

  1. Marinate the chicken pieces in yogurt, biryani masala, red chili powder, turmeric, and salt, for at least 2 hours.
  2. In a large pot, heat oil and ghee, and fry the thinly sliced onions until golden brown. Remove and set aside.
  3. In the same pot, add whole spices and cook until fragrant. Add tomatoes, coriander, mint, and marinated chicken. Cook until chicken is almost done.
  4. Layer half of the soaked rice on top of the chicken, sprinkle fried onions, saffron milk, and fried cashews and raisins. Repeat with the remaining rice and toppings.
  5. Cover and cook on low heat for 30 minutes, until the rice is fully cooked and the flavors have melded together.
  6. Serve hot with raita and salad.
