Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup raw, unsalted peanuts
  • 1/2 cup raw sunflower seeds
  • 1/2 cup honey
  • 1/4 cup melted coconut oil
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots, chopped

Directions

  1. Preheat oven to 300°F (150°C).
  2. In a large bowl, combine oats, peanuts, sunflower seeds, honey, coconut oil, cinnamon, nutmeg, and salt. Mix until all ingredients are evenly distributed.
  3. Spread the mixture onto a large baking sheet lined with parchment paper. Bake for 20-30 minutes, stirring every 10 minutes, until the granola is golden brown.
  4. Remove from oven and let cool completely before transferring to an airtight container.
  5. Stir in dried cranberries and chopped apricots.
  6. Store in an airtight container for up to two weeks.
