Ingredients
- 1 pound fresh pasta dough
- 4 ounces Gorgonzola cheese, crumbled
- 2 pears, cored and diced
- 1/4 cup chopped fresh parsley
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
- Divide the pasta dough into 4 equal portions. Roll out each portion on a lightly floured surface until it is very thin.
- Spread the Gorgonzola cheese, pears, parsley, and Parmesan cheese over half of each dough sheet, leaving a 1/2 inch border around the edges.
- Brush the edges with the olive oil and fold the dough over the filling. Use a fork to press down on the edges and seal the ravioli.
- Cut the ravioli into desired shapes and place them on a lightly floured baking sheet.
- Bring a large pot of salted water to a boil. Drop the ravioli into the boiling water and cook for 3-5 minutes, or until they are tender.
- Drain the ravioli and serve with Parmesan cheese and freshly ground black pepper.
