Ingredients
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef or pork
- 1 tablespoon curry powder
- 1 tablespoon garam masala
- 1 teaspoon tamarind paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 2 cups beef or chicken broth
- 1/2 cup coconut milk
- 1/2 teaspoon sugar
- Salt and pepper to taste
- 1/2 cup frozen peas
- 1/2 cup diced carrots
Directions
- Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring often, until the onion is softened, about 5 minutes.
- Add the ground beef or pork and cook, stirring to break it up, until no longer pink, about 5 minutes.
- Add the curry powder, garam masala, tamarind paste, cumin, coriander, turmeric and cayenne pepper and cook, stirring, for 1 minute.
- Add the broth, coconut milk and sugar and bring to a simmer. Reduce the heat to low and simmer, stirring occasionally, for 15 minutes.
- Add the peas and carrots and simmer for 5 minutes more.
- Season with salt and pepper to taste.
- Serve over cooked rice.
