Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef or pork
  • 1 tablespoon curry powder
  • 1 tablespoon garam masala
  • 1 teaspoon tamarind paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 2 cups beef or chicken broth
  • 1/2 cup coconut milk
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring often, until the onion is softened, about 5 minutes.
  2. Add the ground beef or pork and cook, stirring to break it up, until no longer pink, about 5 minutes.
  3. Add the curry powder, garam masala, tamarind paste, cumin, coriander, turmeric and cayenne pepper and cook, stirring, for 1 minute.
  4. Add the broth, coconut milk and sugar and bring to a simmer. Reduce the heat to low and simmer, stirring occasionally, for 15 minutes.
  5. Add the peas and carrots and simmer for 5 minutes more.
  6. Season with salt and pepper to taste.
  7. Serve over cooked rice.
