Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring often, until the onion is softened, about 5 minutes.
Add the ground beef or pork and cook, stirring to break it up, until no longer pink, about 5 minutes.
Add the curry powder, garam masala, tamarind paste, cumin, coriander, turmeric and cayenne pepper and cook, stirring, for 1 minute.
Add the broth, coconut milk and sugar and bring to a simmer. Reduce the heat to low and simmer, stirring occasionally, for 15 minutes.
Add the peas and carrots and simmer for 5 minutes more.
Season with salt and pepper to taste.
Serve over cooked rice.
