Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground turkey
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1 large butternut squash, peeled and cut into 1-inch cubes
- 1 cup uncooked whole wheat noodles
- 1/2 cup heavy cream
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
- Add the ground turkey and cook until the meat is no longer pink, breaking it up as it cooks.
- Stir in the thyme, sage, cumin, paprika and black pepper and cook for 1 minute.
- Add the chicken broth and bring to a boil. Add the cubed butternut squash and reduce the heat to low. Simmer for 10 minutes.
- Add the noodles and cook for 8-10 minutes, or until the noodles are cooked through.
- Stir in the heavy cream and season with salt and pepper, to taste.
- Serve the soup hot with a sprinkle of fresh herbs, if desired.
