Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth
  • 1 large butternut squash, peeled and cut into 1-inch cubes
  • 1 cup uncooked whole wheat noodles
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
  2. Add the ground turkey and cook until the meat is no longer pink, breaking it up as it cooks.
  3. Stir in the thyme, sage, cumin, paprika and black pepper and cook for 1 minute.
  4. Add the chicken broth and bring to a boil. Add the cubed butternut squash and reduce the heat to low. Simmer for 10 minutes.
  5. Add the noodles and cook for 8-10 minutes, or until the noodles are cooked through.
  6. Stir in the heavy cream and season with salt and pepper, to taste.
  7. Serve the soup hot with a sprinkle of fresh herbs, if desired.
