Ingredients
- 1 lb. chanterelle mushrooms, sliced
- 1 lb. potatoes, cut into cubes
- 2 cloves of garlic, minced
- 2 tablespoons of butter
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Directions
- Preheat the oven to 425 degrees Fahrenheit.
- In a large bowl, combine the potatoes, garlic, butter, thyme, salt, and pepper. Mix until evenly coated.
- Spread the potato mixture onto a baking sheet. Roast for 25 minutes, stirring occasionally, until the potatoes are golden brown.
- Meanwhile, heat a large skillet over medium-high heat. Add the mushrooms and cook for 5 minutes, or until softened.
- Once the potatoes are finished, add the mushrooms to the baking sheet and mix with the potatoes. Roast for an additional 10 minutes.
