Ingredients

  • 2 cups semolina flour
  • 2 cups all-purpose flour
  • 4 large eggs

Directions

  1. In a large mixing bowl, combine the semolina flour and all-purpose flour. Make a well in the center.
  2. Crack the eggs into the well, and add the olive oil and salt.
  3. Using a fork, gradually incorporate the flour into the eggs, starting from the center and working your way out.
  4. Once the dough starts to come together, transfer it to a lightly floured surface.

  9. If using a pasta machine, start with the widest setting and gradually decrease the thickness with each pass.
  10. Cut the rolled dough into your desired pasta shape, such as fettuccine or spaghetti.
  11. If making stuffed pasta, such as ravioli or tortellini, place the filling on one sheet of dough and cover with another sheet. Press to seal and cut into individual pieces.
  12. Bring a large pot of salted water to a boil. Cook the pasta for 2-3 minutes, or until al dente.
