  • 1/2 teaspoon curing salt
  • 1/2 teaspoon liquid smoke

Directions

  2. Add the salt, black pepper, garlic powder, onion powder, mustard seeds, paprika, curing salt, and liquid smoke. Mix until all the spices are evenly distributed.
  3. Cover the bowl with plastic wrap and refrigerate for 24 hours to allow the flavors to develop.
  4. Preheat the oven to 300°F (150°C).
  5. Shape the meat mixture into several 6-inch-long logs. Place the logs on a baking sheet lined with aluminum foil.
  6. Bake the sausages for 1 hour, or until the internal temperature reaches 160°F (71°C).
  7. Remove the sausages from the oven and let them cool completely.
  8. Once cooled, wrap the sausages tightly in plastic wrap or parchment paper and refrigerate for at least 6 hours, or overnight.
