Ingredients

  • 2 1/2 cups whole wheat flour
  • 1 1/2 cups spelt flour
  • 1/2 cup barley flour
  • 1/2 cup lentils
  • 1/4 cup millet
  • 1/4 cup great northern beans
  • 1/4 cup red kidney beans
  • 1/4 cup pinto beans
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons active dry yeast
  • 1 1/2 teaspoons salt
  • 2 1/4 cups warm water

Directions

  1. In a large bowl, combine the whole wheat flour, spelt flour, and barley flour. Mix well.
  2. In a separate bowl, combine the lentils, millet, great northern beans, red kidney beans, and pinto beans. Rinse well under cold water and drain.
  3. Place the rinsed beans and grains in a blender or food processor. Process until finely ground.
  4. In a small bowl, dissolve the active dry yeast and honey in warm water. Let it sit for 5 minutes until frothy.
  5. Add the yeast mixture, olive oil, and salt to the flour mixture. Stir well to combine.
  6. Gradually add the warm water while stirring the dough. Continue to mix until a sticky dough forms.
  7. Transfer the dough to a floured surface and knead for 8-10 minutes, adding more flour if needed, until the dough becomes elastic and smooth.
  8. Grease a large bowl with olive oil and place the dough in it. Cover with a clean kitchen towel and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  9. Preheat the oven to 375°F (190°C).
  10. Punch down the risen dough and divide it into two equal portions. Shape each portion into a loaf and place them on a greased baking sheet or in greased loaf pans.
  11. Cover the loaves with the kitchen towel and let them rise for another 30-45 minutes, or until they have risen again.
  12. Bake the loaves in the preheated oven for 30-35 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  13. Remove the loaves from the oven and let them cool on a wire rack before slicing.
