2 boneless, skinless chicken breasts, cut into 1-inch cubes
1 onion, chopped
2 cloves garlic, minced
1 cup white wine
1 cup heavy cream
1/4 cup freshly grated Parmesan cheese
Salt and pepper to taste
2 tablespoons chopped fresh parsley
Directions
Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions.
Meanwhile, heat the olive oil in a large skillet over medium heat. Add the chicken and cook, stirring occasionally, until golden brown and cooked through, about 5 minutes. Remove the chicken from the skillet.
Add the onion to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute.
Add the white wine and bring to a simmer. Simmer for 5 minutes. Add the cream and bring to a simmer. Simmer for 5 minutes.
Drain the fettuccine and add it to the skillet. Add the chicken, Parmesan cheese, and salt and pepper to taste. Stir to combine.
Garnish with the fresh parsley and serve.
