Ingredients
- 1 pound fettuccine
- 3 tablespoons olive oil
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup white wine
- 1 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Directions
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the chicken and cook, stirring occasionally, until golden brown and cooked through, about 5 minutes. Remove the chicken from the skillet.
- Add the onion to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute.
- Add the white wine and bring to a simmer. Simmer for 5 minutes. Add the cream and bring to a simmer. Simmer for 5 minutes.
- Drain the fettuccine and add it to the skillet. Add the chicken, Parmesan cheese, and salt and pepper to taste. Stir to combine.
- Garnish with the fresh parsley and serve.
