2 lbs. boneless, skinless chicken breasts, cut into strips
1/4 cup soy sauce
3 tablespoons freshly grated ginger
2 cloves garlic, minced
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon freshly ground black pepper
2 tablespoons peanut oil
Bamboo skewers, soaked in water for 30 minutes
2 cups unsweetened peanut butter
1 cup coconut milk
2 tablespoons freshly squeezed lime juice
2 tablespoons honey
2 tablespoons fish sauce
1 teaspoon red pepper flakes
Directions
In a medium bowl, combine the soy sauce, ginger, garlic, coriander, cumin, turmeric, cinnamon, cardamom, and black pepper. Whisk to combine, then add the chicken strips and stir to coat. Cover and refrigerate for 30 minutes.
Preheat the grill to medium-high heat.
Thread the chicken strips onto the soaked bamboo skewers. Brush the chicken skewers with peanut oil.
Grill the chicken skewers for 4-5 minutes per side, or until cooked through. Remove from the grill and set aside.
In a medium saucepan, combine the peanut butter, coconut milk, lime juice, honey, fish sauce, and red pepper flakes. Cook over medium heat, stirring often, until the sauce is hot and smooth.
Serve the chicken skewers with the warm peanut sauce.
