Ingredients

  • 1/2 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 2 slices of cheese (such as cheddar, mozzarella, or monterey jack)
  • 4 slices of bread
  • Butter, for spreading

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the shrimp to the skillet and season with garlic powder, salt, and pepper.
  3. Cook the shrimp for 3-4 minutes, flipping once, until cooked through and lightly golden brown.
  4. In a small bowl, combine the mayonnaise and lemon juice to make the aioli.
  5. Spread butter on one side of each slice of bread.
  6. Place 2 slices of bread, butter side down, in the skillet.
  7. Top each slice of bread with a slice of cheese and the cooked shrimp.
  8. Spread the aioli on the other side of the bread and top each sandwich.
  9. Cook until the cheese is melted and the bread is golden brown, about 3 minutes per side.
