Ingredients
2 boneless skinless chicken breasts
2 eggs
1 cup of all-purpose flour
1 teaspoon of garlic powder
1 teaspoon of paprika
1/2 teaspoon of black pepper
1/2 teaspoon of salt
1/2 cup of breadcrumbs
1/4 cup of vegetable oil
1/2 cup of heavy cream
1/4 cup of mango puree

Directions
In a shallow bowl, whisk together the eggs.
In another shallow bowl, combine the flour, garlic powder, paprika, black pepper, and salt.
In a third shallow bowl, add the breadcrumbs.
Dip each chicken breast in the egg mixture, then coat with the flour mixture, then dip back in the egg mixture, and finally coat with the breadcrumbs.
Heat the vegetable oil in a large skillet over medium heat, and add the chicken breasts.
Cook the chicken breasts for about 8 minutes per side, or until golden brown and cooked through.
Remove the chicken from the skillet and set aside.
In the same skillet, add the heavy cream, mango puree, lemon juice, and parsley, and stir to combine.
Simmer the sauce for about 5 minutes, or until thickened.
Add the chicken breasts back to the skillet and spoon the sauce over them.
Serve the chicken schnitzel with the mango cream sauce.
