Ingredients
- 2 boneless skinless chicken breasts
- 2 eggs
- 1 cup of all-purpose flour
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1/2 teaspoon of black pepper

- 1/2 cup of breadcrumbs
- 1/4 cup of vegetable oil
- 1/2 cup of heavy cream

- 1 tablespoon of fresh lemon juice
- 2 tablespoons of chopped fresh parsley
Directions
- In a shallow bowl, whisk together the eggs.
- In another shallow bowl, combine the flour, garlic powder, paprika, black pepper, and salt.
- In a third shallow bowl, add the breadcrumbs.
- Dip each chicken breast in the egg mixture, then coat with the flour mixture, then dip back in the egg mixture, and finally coat with the breadcrumbs.
- Heat the vegetable oil in a large skillet over medium heat, and add the chicken breasts.
- Cook the chicken breasts for about 8 minutes per side, or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the heavy cream, mango puree, lemon juice, and parsley, and stir to combine.
- Simmer the sauce for about 5 minutes, or until thickened.
- Add the chicken breasts back to the skillet and spoon the sauce over them.
- Serve the chicken schnitzel with the mango cream sauce.
