Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups shredded cheese
  • 1/2 cup chopped onions
  • 1/4 cup chopped bell peppers
  • 1 can enchilada sauce
  • 1 package flour tortillas
  • 1/4 cup butter
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium skillet, heat the butter over medium-high heat. Add the chicken breasts and season with salt and pepper. Cook until chicken is no longer pink, about 10 minutes. Remove from heat and shred the chicken with two forks.
  3. In a medium bowl, mix together the shredded chicken, cheese, onions, bell peppers, and enchilada sauce.
  4. Spread a scoop of the chicken mixture into each tortilla, roll up, and place in a 9x13 inch baking dish. Pour remaining enchilada sauce over the top.
  5. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
