Ingredients

  • For the Noodles:
  • - 2 cups all-purpose flour
  • - 1/2 teaspoon salt
  • - 2 large eggs
  • - 1/4 cup water
  • For the Broth:
  • - 4 cups chicken or vegetable broth
  • - 2 cloves garlic, minced
  • - 1 tablespoon grated ginger
  • - 2 tablespoons low-sodium soy sauce
  • - 1 teaspoon sesame oil
  • Optional Toppings:
  • - Sliced green onions
  • - Soft-boiled eggs
  • - Steamed vegetables
  • - Sliced mushrooms
  • - Nori seaweed
  • - Chili oil
  • - Sesame seeds

Directions

  1. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center.
  2. In a separate bowl, whisk together the eggs and water. Pour the egg mixture into the well of the flour mixture.
  3. Gradually incorporate the flour into the egg mixture using a fork or your hands. Knead the dough for about 5 minutes until it becomes smooth and elastic.
  4. Divide the dough into 4 portions. Roll out each portion using a rolling pin until it reaches a thickness of about 2 mm.
  5. Cut the rolled-out dough into thin noodles using a sharp knife or a pasta machine.
  6. Bring a large pot of water to a boil. Cook the noodles for about 2-3 minutes or until al dente. Drain and set aside.
  7. In a separate pot, heat the broth over medium heat. Add the minced garlic, grated ginger, soy sauce, and sesame oil. Simmer for 10 minutes to let the flavors meld.
  8. To serve, divide the cooked noodles into bowls. Ladle the hot broth over the noodles.
  9. Top with your preferred toppings such as sliced green onions, soft-boiled eggs, steamed vegetables, sliced mushrooms, nori seaweed, chili oil, and sesame seeds.
  10. Enjoy your homemade all natural ramen noodles!
