Ingredients

  • 2 cups cooked ham, diced
  • 4 cups potatoes, peeled and thinly sliced
  • 1 cup cheddar cheese, shredded
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup breadcrumbs
  • 2 tbsp parsley, chopped

Directions

  1. Preheat the oven to 350°F. Grease a baking dish.
  2. Layer half of the potatoes in the baking dish, followed by half of the ham and half of the cheese.
  3. Repeat the layers one more time.
  4. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  5. Gradually whisk in the milk until smooth and thickened. Season with salt and pepper.
  6. Pour the sauce over the potato and ham layers in the baking dish.
  7. In a small bowl, combine breadcrumbs, parsley, and a little cheese. Sprinkle over the top of the casserole.
  8. Cover with foil and bake for 40 minutes. Remove the foil and bake for an additional 10-15 minutes, or until bubbly and golden brown.
  9. Let it cool slightly before serving.
