  • 1 pound beef stew meat, cut into bite-sized pieces

  • 2 potatoes, peeled and cubed

  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the diced onion and minced garlic. Saute until fragrant and translucent.
  3. Add the carrots, celery, bell pepper, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.
  4. Return the cooked beef to the pot. Add the diced tomatoes, beef broth, water, dried thyme, dried rosemary, bay leaf, salt, and pepper. Stir to combine.
  5. Bring the soup to a boil, then reduce the heat to low. Cover the pot and simmer for 25-30 minutes, or until the vegetables are tender and the beef is cooked through.
  6. Remove the bay leaf and discard. Taste the soup and adjust the seasoning if needed.
