  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut into pieces
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 can kidney beans, drained and rinsed
  • 1 can chickpeas, drained and rinsed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Directions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
  2. Add carrots, celery, and bell peppers. Cook for 5 minutes, stirring occasionally.
  3. Stir in zucchini, green beans, diced tomatoes, vegetable broth, kidney beans, chickpeas, thyme, rosemary, and paprika.
  4. Bring to a simmer, then reduce heat to low and let simmer for 30 minutes, stirring occasionally.
  5. Season with salt and pepper to taste. Serve hot and enjoy!
