Hearty Turkey Soup with Parsley Dumplings

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1/2 cup chopped fresh parsley
  • 1/2 cup all-purpose flour
  • 3 tablespoons butter, melted
  • 1/4 cup milk

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the ground turkey and cook until browned, about 5 minutes.
  4. Stir in the chicken broth, tomatoes, salt, and pepper and bring to a boil.
  5. Reduce the heat to low and simmer for 30 minutes.
  6. Stir in the corn and peas and simmer for 10 minutes longer.
  7. In a medium bowl, combine the parsley, flour, butter, and milk and mix until a soft dough forms.
  8. Drop spoonfuls of the dough into the soup and simmer for 15 minutes.
  9. Serve the soup hot with extra parsley for garnish, if desired.
