Ingredients

  • 1 cup dried split green peas
  • 1 small onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil

Directions

  1. Soak the split peas in water for at least one hour. Drain and set aside.
  2. Turn on the instant pot and select the sauté function. Heat the olive oil and add the onions, carrots, and celery. Sauté until the vegetables are slightly softened.
  3. Add the minced garlic, dried thyme, dried rosemary, bay leaf, black pepper, and a pinch of salt. Stir well to combine.
  4. Add the soaked split peas and vegetable broth to the instant pot. Stir to combine all the ingredients.
  5. Close the instant pot lid and set the vent to the sealing position.
  6. Select the pressure cook function and set the timer for 15 minutes on high pressure.
  7. Once the cooking time is complete, allow for a natural pressure release for about 10 minutes. Then, carefully perform a quick pressure release to release any remaining pressure.
  8. Open the instant pot lid and remove the bay leaf. Use an immersion blender to puree the soup until smooth and creamy.
  9. Adjust the seasoning by adding more salt and pepper if needed. You can also add more vegetable broth or water to reach your desired consistency.
  10. Serve the soup hot and garnish with fresh herbs if desired. Enjoy!
