  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary

  • 1/4 teaspoon black pepper
  • 9 ounces refrigerated cheese tortellini
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  2. Add the diced ham to the pot and cook for an additional 2 minutes.
  3. Pour in the chicken broth and add the bay leaf, dried thyme, dried rosemary, salt, and pepper. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes to allow the flavors to meld together.
  4. Add the cheese tortellini to the pot and cook according to package instructions, usually about 7-9 minutes. Stir in the frozen peas and cook for an additional 2 minutes.
  5. Remove the bay leaf from the pot and discard.
  6. Sprinkle the fresh parsley over the soup and stir to combine.
