Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 2 cans white beans, drained and rinsed
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery and sauté until vegetables are tender, about 5 minutes.
  3. Add garlic, thyme, and rosemary and cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add chicken breasts and reduce heat to a simmer. Cook for 20 minutes, until chicken is cooked through.
  6. Remove chicken from pot and shred with two forks. Return chicken to pot.
  7. Add white beans and season with salt and pepper. Cook for another 10 minutes.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, garnished with chopped parsley.
