This Guinness steak pie is a delicious and filling dish that combines the bold flavors of Guinness beer with tender chunks of beef, vegetables, and flaky pastry. Perfect for a cold winter's night or a special St. Patrick's Day treat, this pie is sure to warm your soul.

Ingredients

  • 2 lbs stewing beef, cut into cubes
  • 2 onions, chopped
  • 2 carrots, peeled and diced
  • 2 stalks of celery, sliced
  • 2 cloves of garlic, minced
  • 1 can of Guinness beer
  • 2 cups beef broth
  • 1/4 cup flour
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 sheets of puff pastry

Directions

  1. In a large pot, brown the beef over medium-high heat. Remove the beef and set aside.
  2. In the same pot, sauté the onions, carrots, celery, and garlic until softened.
  3. Add the beef back to the pot and sprinkle flour over the mixture. Stir to coat the beef and vegetables.
  4. Pour in the Guinness beer, beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Bring to a simmer.
  5. Cover and cook for 1 hour or until the beef is tender.
  6. Preheat the oven to 400°F.
  7. Transfer the beef mixture to a baking dish and cover with puff pastry. Trim any excess pastry and crimp the edges.
  8. Brush the pastry with egg wash and make slits in the top for steam to escape.
  9. Bake for 25-30 minutes or until the pastry is golden brown and flaky.
