Ingredients

  • Lentils (1 cup, cooked)
  • Oats (1 cup, dry)
  • Carrots (2, grated)
  • Onion (1, finely chopped)
  • Garlic (3 cloves, minced)
  • Red bell pepper (1, finely chopped)
  • Tomato paste (3 tablespoons)
  • Tamari or soy sauce (2 tablespoons)
  • Nutritional yeast (2 tablespoons)
  • Flaxseed meal (3 tablespoons)
  • Chopped fresh parsley (1/4 cup)
  • Dried thyme (1 teaspoon)
  • Dried oregano (1 teaspoon)
  • Paprika (1/2 teaspoon)
  • Salt (1/2 teaspoon)
  • Black pepper (1/4 teaspoon)

Directions

  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a large mixing bowl, combine the cooked lentils, oats, grated carrots, chopped onion, minced garlic, chopped red bell pepper, tomato paste, tamari or soy sauce, nutritional yeast, flaxseed meal, chopped fresh parsley, dried thyme, dried oregano, paprika, salt, and black pepper. Mix well until all ingredients are evenly combined.
  3. Transfer the mixture to the greased loaf pan and smooth the top with a spatula or the back of a spoon.
  4. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the loaf is firm.
  5. Remove from the oven and let it cool for a few minutes before slicing.
  6. Serve slices of the meatless meatloaf with mashed potatoes and gravy, if desired.
