Ingredients

  • 2 pounds beef stew meat, cut into bite-sized chunks
  • 2 tablespoons vegetable oil

  • 3 garlic cloves, minced
  • 4 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 8 small potatoes, halved
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 cup Guinness beer
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the beef stew meat to the pot and brown on all sides until well-seared. Remove the beef from the pot and set aside.
