- 1 pound Italian sausage, casings removed

- 1/2 teaspoon red pepper flakes (optional)

- 4 cups chopped kale, stems removed
- 1 cup heavy cream
Directions
- In a large pot, cook the Italian sausage over medium heat, breaking it up into small pieces with a wooden spoon, until browned and cooked through.
- Add the chopped onion and minced garlic to the pot and cook until the onion is soft and translucent.
- Pour in the chicken broth and water, then add the diced potatoes, dried thyme, dried rosemary, and red pepper flakes (if using). Season with salt and black pepper to taste.
