Ingredients

  • 1 cup unsalted butter
  • ½ cup powdered sugar

  • Powdered sugar (for rolling)

Directions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, powdered sugar, and vanilla extract until light and fluffy.
  3. Add the gluten-free flour and chopped pecans to the bowl and mix until well combined.
  4. Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  5. Bake for 12-15 minutes or until the bottoms of the cookies are lightly golden.
  6. Remove from the oven and let the cookies cool for 5 minutes on the baking sheet.
