Ingredients
- 1 cup unsalted butter
- ½ cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups gluten-free all-purpose flour
- 1 cup finely chopped pecans
- Powdered sugar (for rolling)
Directions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, powdered sugar, and vanilla extract until light and fluffy.
- Add the gluten-free flour and chopped pecans to the bowl and mix until well combined.
- Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- Bake for 12-15 minutes or until the bottoms of the cookies are lightly golden.
- Remove from the oven and let the cookies cool for 5 minutes on the baking sheet.
- While the cookies are still warm, roll them in powdered sugar until coated.
