Ingredients

  • 2 pounds stewing beef, cut into 1-inch cubes
  • 2 tablespoons olive oil

  • 1 celery stalk, sliced
  • 1 cup sliced mushrooms
  • 4 cups beef broth
  • 1 cup red wine
  • 2 bay leaves

  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  2. Add the beef cubes and brown on all sides. Remove the beef from the pot and set aside.
  3. In the same pot, add the onion, garlic, carrots, potatoes, celery, and mushrooms. Saute until the vegetables are slightly softened.
