Ingredients
- 2 cups shredded leftover roast chicken
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 6 cups chicken broth

- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 bay leaf
Directions
- In a large pot, heat olive oil over medium heat.
