Ingredients

  • 10 rice paper wrappers
  • 1 cup cooked vermicelli noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1 cup bean sprouts
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh basil leaves
  • 1/2 cup cooked and sliced protein of your choice (tofu, shrimp, chicken, or pork)
  • Peanut dipping sauce for serving

Directions

  1. Prepare all the ingredients and arrange them in separate bowls for easy assembly.
  2. Fill a large shallow dish or a pie plate with warm water.
  3. Dip one rice paper wrapper into the warm water for a few seconds until it becomes soft and pliable. Remove from the water and place it on a clean work surface.
  4. Place a small handful of vermicelli noodles on the lower third of the rice paper wrapper.
  5. Top the noodles with a small amount of each vegetable, herbs, and protein of your choice.
  6. Fold the sides of the rice paper over the filling and tightly roll it up from the bottom, tucking in the sides as you go.
  7. Repeat the process with the remaining ingredients.
  8. Serve the fresh spring rolls with peanut dipping sauce on the side for a delicious and healthy appetizer or main dish.
