Directions

  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, mix together the flour and sugar for the cookie crust. Add the cold cubed butter and using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
  3. Press the cookie crust mixture evenly into the prepared baking pan. Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden.
  4. Meanwhile, in another bowl, combine the shredded coconut and sweetened condensed milk for the coconut filling. Mix until well combined.
