This Yellow Squash and Tofu Stir Fry is a quick and easy vegetarian dish that is perfect for a weeknight dinner. The combination of tender yellow squash and protein-packed tofu, flavored with a savory stir fry sauce, creates a dish that is both satisfying and delicious.

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 medium yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of hoisin sauce
  • 1 teaspoon of sesame oil
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste

Directions
