Ingredients

  • 1 lb chicken breast, boneless and skinless
  • 1 cup adzuki beans, soaked overnight
  • 1 large sweet potato, peeled and diced
  • 1 head escarole, cleaned and chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Directions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and minced garlic to the pot and sauté until they become fragrant and translucent.
  3. Add the chicken breast to the pot and cook until it turns golden brown on all sides.
  4. Remove the chicken from the pot and set aside.
  5. In the same pot, add the soaked adzuki beans, diced sweet potatoes, dried thyme, and dried rosemary.
  6. Pour in the chicken broth and water, and bring the mixture to a boil.
  7. Reduce the heat to low and simmer for 20 minutes, or until the adzuki beans and sweet potatoes are tender.
  8. While the soup simmers, shred the cooked chicken breast into bite-sized pieces.
  9. Add the shredded chicken and chopped escarole to the pot and continue simmering for 5 more minutes.
  10. Season the soup with salt and pepper to taste.
