Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup slivered almonds

Directions

  1. Preheat the grill to medium-high heat.
  2. Place chicken breasts on a large plate. Drizzle with olive oil and season with garlic powder, salt and pepper.
  3. Grill chicken for 5-6 minutes per side, or until cooked through. Remove from grill and set aside.
  4. In a medium bowl, whisk together red wine vinegar, olive oil, lemon juice, honey, salt and pepper. Set aside.
  5. In a large bowl, combine lettuce, tomatoes, feta cheese and almonds. Add the grilled chicken and pour the dressing over the salad.
  6. Toss the salad until everything is evenly coated with the dressing. Serve immediately.
