Ingredients

  • 8 ounces pancetta, diced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound mixed greens (such as kale, spinach, and Swiss chard), washed and chopped
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 1/2 cup chicken or vegetable broth
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Grated Parmesan cheese for garnish

Directions

  1. In a large skillet, cook the diced pancetta over medium heat until crispy. Remove the pancetta from the skillet and set aside.
