Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 cups vegetable broth
  • 2 cups water
  • 2 pounds fresh green beans, trimmed and cut into 1-inch pieces

Directions

  1. Heat the olive oil in a large stockpot over medium heat. Add the onion and garlic and cook for 5 minutes, or until softened.
  2. Add the oregano, thyme, red pepper flakes, paprika, black pepper, salt and sugar and stir to combine.
  3. Add the vegetable broth, water and green beans and bring to a boil. Reduce heat to low and simmer for 25 minutes, or until the beans are tender.
  4. Using an immersion blender, blend the soup until desired consistency is reached.
  5. Serve hot.
