Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 1 pound beef sirloin, sliced into thin strips
  • 3 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/2 cup beef broth
  • 1/2 cup sour cream
  • 1 tablespoon cornstarch
  • 1/4 cup chopped parsley, for garnish

Directions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the onion and cook until starting to soften, about 3 minutes.
  3. Add the beef and cook until lightly browned, about 4 minutes.
  4. Add the garlic, smoked paprika, Worcestershire sauce, and thyme and cook until fragrant, about 1 minute.
  5. Add the beef broth and bring to a simmer. Cover and cook until the beef is tender, about 8 minutes.
  6. In a small bowl, whisk together the sour cream and cornstarch. Add to the skillet and stir to combine.
  7. Simmer until the sauce thickens, about 5 minutes.
  8. Garnish with parsley and serve.
