Add the sweet potatoes to the Instant Pot and add the butter, garlic, chicken broth, salt and pepper. Close the lid and set the valve to sealing. Press the manual or pressure cook button and set the timer for 10 minutes.
Once the time is up, carefully release the pressure. Open the lid and drain any excess liquid. Mash the sweet potatoes with a potato masher or an immersion blender until desired consistency is reached.
Stir in the parsley and goat cheese. Taste and adjust seasonings if desired.
Serve immediately or store in an airtight container in the refrigerator for up to 5 days.
