Ingredients

  • 8 ounces fettuccine pasta
  • 1 pound large shrimp, peeled and deveined
  • 8 ounces andouille sausage, sliced

  • 1 green bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning

Directions

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the sliced andouille sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.
  4. In the same skillet, add the sliced bell peppers, onion, and garlic. Cook until the vegetables are tender, about 5-7 minutes.
  5. Add the Cajun seasoning to the skillet and stir to coat the vegetables evenly.
  6. Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes until the sauce thickens slightly.
  7. Stir in the Parmesan cheese until melted and well combined. Season with salt and black pepper to taste.
  8. Add the cooked fettuccine pasta, shrimp, and sausage to the skillet. Toss to coat everything evenly in the sauce.
  9. Remove from heat and garnish with chopped green onions.
