Ingredients

  • 2 cups rolled oats
  • 1/2 cup raw cashews, roughly chopped
  • 1/2 cup sunflower seeds
  • 1/4 cup coconut oil, melted
  • 3 tablespoons pure maple syrup
  • 2 tablespoons freshly grated ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt

Directions

  1. Preheat oven to 350°F (175°C).
  2. Line a large baking sheet with parchment paper.
  3. In a large bowl, mix together the oats, cashews, and sunflower seeds.
  4. In a small bowl, whisk together the coconut oil, maple syrup, ginger, cinnamon, and salt.
  5. Pour the oil mixture over the oats mixture and stir until evenly combined.
  6. Spread the granola mixture out on the prepared baking sheet in an even layer.
  7. Bake for 20 minutes, stirring once halfway through.
  8. Remove from the oven and let cool completely before storing in an airtight container.
