Ingredients

  • 1 pound of macaroni
  • 1/2 pound chorizo
  • 1/2 cup diced jalapeños
  • 1 cup of queso fresco
  • 1/2 cup of heavy cream
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of butter
  • 1/4 cup of flour
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large pot, bring water to a boil and add macaroni. Cook until al dente.
  3. In a large skillet, cook the chorizo over medium-high heat for 5-7 minutes, until browned and cooked through.
  4. Drain the chorizo and set aside.
  5. In a medium saucepan, melt the butter over medium heat and add the flour. Stir until the mixture is thick and bubbling.
  6. Whisk in the heavy cream, stirring constantly until the mixture is thick and creamy.
  7. Add the queso fresco, cheddar cheese, jalapeños, and cooked chorizo. Stir until the cheese is melted.
  8. Add the cheese sauce to the cooked macaroni and mix until combined.
  9. Pour the mac and cheese into a greased 9x13 inch baking dish.
  10. Bake in the preheated oven for 20 minutes, or until golden and bubbly.
