Ingredients

  • 2 Cornish hens, thawed
  • 3 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon rosemary, dried
  • 1 teaspoon thyme, dried
  • 1 teaspoon oregano, dried
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 375°F.
  2. Rinse the hens and pat dry. Pat the outside of the hens dry to ensure that the seasoning adheres.
  3. In a small bowl, mix together the melted butter, garlic, rosemary, thyme, oregano, paprika, salt and pepper.
  4. Brush the hens with the seasoned butter and place in a roasting pan. Roast for 45 minutes or until the internal temperature reaches 165°F.
  5. Allow the hens to rest for 10 minutes before carving and serving.
