Ingredients
- 1/2 pound large shrimp, peeled and deveined
- 1/2 cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon rice wine vinegar
- 1/4 teaspoon sesame oil
- 1/2 teaspoon sugar
- 2 tablespoons vegetable oil
- 1 cup broccoli florets
- 1/2 cup snow peas, thinly sliced
- 1/2 cup carrots, thinly sliced
- 1/4 cup green onions, thinly sliced
- 1/4 cup peanuts, chopped
Directions
- In a medium bowl, combine the shrimp, soy sauce, garlic, ginger, vinegar, sesame oil, and sugar. Toss to coat the shrimp, then set aside for at least 15 minutes.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and marinade, and cook for 3-4 minutes, until the shrimp are opaque and cooked through. Remove the shrimp from the skillet and set aside.
- Add the broccoli, snow peas, carrots, and green onions to the skillet, and cook for 3-4 minutes, stirring frequently, until the vegetables are tender-crisp.
- Return the shrimp to the skillet, and stir to combine. Cook for 1-2 minutes, until everything is heated through. Remove from heat and stir in the peanuts.
- Serve the shrimp-pu-pu with white rice, if desired.
