Ingredients
- 1 cup mixed dried fruits (such as raisins, cranberries, apricots)
- 1/2 cup sherry
- 1 package active dry yeast
- 1/4 cup warm water
- 1/4 cup sugar
- 1/4 cup butter, melted
- 1/2 cup milk, warmed
- 2 eggs
- 4 cups all-purpose flour
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Directions
- In a small bowl, soak the dried fruits in sherry and let sit for at least 1 hour.
- In a large mixing bowl, dissolve yeast in warm water. Allow it to sit for 5 minutes until foamy.
- Add sugar, melted butter, warmed milk, and eggs to the yeast mixture. Stir to combine.
- Add half of the flour, salt, cinnamon, and nutmeg to the wet mixture. Mix well.
- Stir in the soaked dried fruits along with any remaining sherry.
- Gradually add the remaining flour until a soft dough forms.
- Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let rise in a warm place for 1 hour or until doubled in size.
- Punch down the dough and shape it into a loaf. Place in a greased loaf pan, cover, and let rise for another 30 minutes.
- Preheat the oven to 350°F (175°C). Bake the bread for 30-35 minutes until golden brown and hollow-sounding when tapped on the bottom.
- Remove from the oven and let cool before slicing and serving.
