Ingredients

  • 1/2 cup canned pumpkin puree
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 9-inch unbaked pie crust
  • 1/2 cup confectioners' sugar
  • 2 tablespoons butter, melted and cooled

Directions

  1. Preheat oven to 350° F (175° C).
  2. In a medium bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, and ginger. Stir until well blended.
  3. In a small bowl, whisk together cream and eggs until smooth.
  4. Line a 9-inch pie plate with the unbaked crust.
  5. Pour the pumpkin mixture into the crust. Pour the cream and egg mixture over the top.
  6. Bake for 40-50 minutes, or until a knife inserted into the center comes out clean.
  7. Let cool completely before frosting.
  8. In a medium bowl, whisk together confectioners' sugar and melted butter until smooth.
  9. Spread the frosting over the cooled pie.
