Fresh Tomato Shrimp Pasta

Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 1/4 cup of olive oil
  • 3 cloves of garlic, minced
  • 1/4 teaspoon of red pepper flakes
  • 2 cups of cherry tomatoes, halved
  • 1/3 cup of dry white wine
  • 1/4 teaspoon of sugar
  • Salt and pepper, to taste
  • 1 pound of pasta, cooked according to package instructions
  • 1/4 cup of chopped fresh parsley

Directions

  1. In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook until just pink, about 3 minutes. Add the garlic and red pepper flakes and cook for 30 seconds.
  2. Add the tomatoes, wine, and sugar and season with salt and pepper. Cook for 3-4 minutes, or until the tomatoes are just beginning to soften.
  3. Add the cooked pasta and toss to combine. Cook for 1-2 minutes, or until the pasta is heated through.
  4. Remove from the heat and stir in the parsley. Serve immediately.
