Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, diced
  • 1 teaspoon dried thyme
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, celery, and potatoes. Sauté for 5-7 minutes, or until the vegetables are tender.
  3. Add the thyme and a few generous pinches of salt and pepper. Stir to combine.
  4. Add the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes, or until the potatoes are tender.
  5. Add the cream and stir to combine.
  6. Allow the soup to simmer for 5-10 minutes, or until the desired consistency is reached.
  7. Serve warm with a sprinkle of fresh herbs, if desired.
